What does lime actually do?

Probably the greatest benefit of liming is that it corrects soil acidity. Lime, being alkaline, neutralizes soil acids. Nearly all agricultural crops (and deer forages) grow best in neutral or near neutral soils.

Lime also supplies the plant foods calcium and magnesium which are two extremely beneficial elements to healthy plant growth.

Another benefit of lime is that it granulates the soil. Clay and silt soils become more 'loose' or granular with the application of lime which allows for better air circulation through the soil and assists in drainage..
